Chocolate-Covered Rice Krispy Treats

Ingredients
For the Rice Krispy Base:
6 cups Rice Krispies cereal
1 (7–7.5 oz) jar marshmallow fluff (about 2 cups)
4 tablespoons unsalted butter
½ teaspoon vanilla extract
Pinch of salt
For the Chocolate Coating:
12 oz semi-sweet or milk chocolate (chips or chopped bar)
1 tablespoon coconut oil or shortening (for smooth coating, optional)
Instructions
1️⃣ Prepare the Pan
Grease or line a 9x9 pan (thick bars) or 9x13 (thinner bars).
2️⃣ Make the Marshmallow Fluff Base
Melt butter in a large pot over low heat.
Add marshmallow fluff and stir constantly until fully melted and smooth. Keep heat low to prevent scorching.
Stir in vanilla and salt.
Remove from heat and quickly fold in Rice Krispies until evenly coated.
3️⃣ Press & Cool
Transfer mixture to prepared pan. Lightly butter your hands or spatula and gently press into the pan — don’t compact too firmly or they’ll get dense.
Let cool for 30–45 minutes until fully set.
4️⃣ Cut Into Bars
Lift from pan (if lined) and cut into squares or rectangles.
5️⃣ Melt the Chocolate
In a microwave-safe bowl:
Heat chocolate in 20–30 second intervals, stirring between each, until smooth.
Stir in coconut oil for a glossy, thinner coating.
6️⃣ Dip or Coat
Option A: Full Dip Dip each bar into melted chocolate using a fork. Tap off excess and place on parchment paper.
Option B: Bottom Dip + Drizzle (Bakery Style) Dip just the bottom of each bar, let set, then drizzle chocolate over the top.
Option C: Full Pan Coat Pour melted chocolate over the entire slab before cutting for a thick chocolate layer on top.
7️⃣ Set
Let chocolate firm at room temperature or refrigerate 15–20 minutes until set.
Storage
Store in an airtight container at room temperature for up to 3 days. The marshmallow fluff helps maintain softness longer than traditional marshmallow-based cereal treats.
